Princess Amparo of Peru- Suspiro de Limeña

You will need:

One tin of evaporated milk,
One tin of condensed milk,
Three eggs,
Three tablespoons of sugar,
Two drops of vanilla essence,
One teaspoon of powdered cinnamon.

1. Crack the eggs, separating them into yolks and whites.
2. Ask your grownup to gently simmer the milks, stirring constantly until thickened.
3. Ask your grownup to stir in the vanilla and the yolks and stir some more.
4. Pour into the serving dishes and leave to cool.
5. In a separate clean bowl, put all the egg whites and start whisking until it makes firm peaks.
6. Add the sugar, bit by bit, until the mixture becomes glossy.
7. Line a baking tray with baking paper, and spoon out little peaks of meringue mixture.
8. Ask your grownup to bake for half an hour, or until dry to the touch.
9. Arrange the meringue peaks on top of the milk mixture and sprinkle cinnamon on top.

Princess Lise of Austria- Kaiserschmarrn

You will need:
One and a half cups of flour,
One cup milk,
Two eggs,
One tablespoon of sultanas,
One tablespoon of sliced almonds,
Three tablespoons of apple sauce,
Half a cup of icing sugar.

1. Crack the eggs, and mix with milk and flour to make a pancake batter.
2. Ask your grownup to add oil to a frying pan, then pour in enough batter to cover the bottom of the pan.
3. Ask your grownup to flip the pancake so that it cooks on both sides, then put in a pile.
4. Rip the pancake pile into pieces about the size of your grownup's fingers.
5. In the frying pan, mix in the apple sauce, the sultanas and the almonds.
6. Sprinkle a layer of icing sugar on top.
7. Ask your grownup to put the whole pan under the grill or use a chef's blow torch until the icing sugar turns golden-brown.

Princess Nimtaj of Iran- Fālūde

فالوده

You will need:
One packet of thin vermicelli noodles,
One cup of sugar,
Three drops of rose syrup,
One lemon,
One pinch of saffron.

1. Mix the saffron and the rose syrup in a cup of water, and add the sugar.
2. Ask your grownup to boil the mixture for five to ten minutes, then leave to cool.
3. Freeze the mixture for half an hour, then crush it up with a fork before putting back in the freezer.
4. Snap the noodles into pieces about as long as your thumb.
5. Ask your grownup to boil the noodles until soft, then leave to cool.
6. Crush the mixture some more, this time adding the noodles.
7. Half an hour later, crush the mixture again, then add lemon juice just before serving.

Princess Pacita of the Phillippines- Taho

You will need:

One packet of silken tofu,
One cup of sago "pearls",
One cup of brown sugar.

1. Ask your grownup to boil the sago until it has a gummy texture, then drain and leave to cool.
2. Put the tofu in a bowl, then slice into walnut-sized chunks.
3. Ask your grownup to add the sugar to a cupful of boiling water and stir for five minutes.
4. Mix the tofu with the sago, and put into serving dishes.
5. Ask your grownup to pour the sugar syrup all over the top.
