Princess Perdissa (Winter)- Rice Pudding

You will need:
One cup of pudding rice,
Three and a half cups of milk,
Half a cup of sugar,
A teaspoon of nutmeg.

1. Stir the sugar and the rice together.
2. Pour the milk on top, making sure it completely covers the rice.
3. Sprinkle the nutmeg on top.
4. Have your grownup bake it for two hours, stirring every twenty minutes.
5. Serve while still hot, possibly with a little blob of jam on top.

Princess Kamballa of Australia- Peach Melba

You will need:

Four peaches,
Four cups of raspberries,
Two tablespoons of sugar
Four tablespoons of almonds,
Four scoops of vanilla ice cream.

1. Put the sugar and peaches in a pan of water, and ask your grownup to boil them for ten minutes.
2. Ask your grownup to take the peaches out of the water, and leave them to cool.
3. Ask your grownup to put the raspberries in a blender until they make a smooth sauce.
4. Press the raspberry sauce through a sieve to get rid of the seeds.
5. In each bowl, put one scoop of vanilla ice cream in, the pour over half the raspberry sauce.
6. Ask your grownup to chop the peaches in half, then peel them.
7. Put the peach halves on top of the ice cream, then add the rest of the raspberry.
8. Sprinkle on the almonds.

Princess Margrethe of Denmark- Koldskål

You will need:

One and a half litres of buttermilk,
Four tablespoons of sugar,
One vanilla pod,
One lemon,
Four crunchy cookies.

1. Ask your grownup to take all the rind off the lemon.
2. Ask your grownup to split the vanilla pod lengthways, then with your fingernail push out all the little vanilla seeds into the buttermilk.
3. Add the sugar and the rind, then stir until the sugar dissolves.
4. Put in the fridge for half an hour.
5. Break the cookies into pieces the size of a penny, then float them on top just before serving.

Princess Valaya of Thailand- Gluay buad chee

You will need:
Ten bananas,
One tablespoon of sugar,
Pinch of salt,
Three tins of coconut milk,
One small carton of coconut cream.

1. Peel the bananas, and break them into small pieces with your hands.
2. Put the salt and sugar into the coconut milk, then ask your grownup to bring it the boil.
3. Ask your grownup to add the bananas and the coconut cream, and simmer for ten minutes.
4. Put the pudding into the fridge so that it's served chilled.

Princess Perdissa (Autumn)- Baked Apple

You will need:

One apple,
Two tablespoons of sultanas,
One tablespoon of golden syrup,
One pinch of cinnamon.

1. Ask your grownup to take the core out of the apple.
2. Mix the golden syrup, sultanas and cinnamon together.
3. Pack the sultana mixture into the hole where the core was, then wrap everything in foil.
4. Ask your grownup to bake the apple for half an hour, then carefully peel off the foil before serving.

Princess Heather of Scotland- Cranachan

You will need:

One cup of double cream,
One cup of porridge oats,
Four tablespoons of raspberries,
Four tablespoons of runny honey,
One teaspoon of vanilla essence.

1. Scatter the oats on a baking tray, then ask your grownup to toast them until golden.
2. Mix the honey, vanilla and cream in a bowl.
3. In each bowl, put the raspberries (save one to put on top).
4. Add in a layer of cream, then a thinner layer of oats, until you fill the bowl.
5. Sprinkle some oats on top, then add the final raspberry.

Princess Grażyna of Poland- Kisiel

You will need:

One cup of strawberries/raspberries/apple pieces,
One cup of fruit juice,
Four tablespoons of carnstarch.

1. Put the fruit, sugar and water into a saucepan.
2. Ask your grownup to bring the mixture to a boil.
3. Once off the heat, stir in the cornstarch.
4. Ask your grownup to returnt he pan tro the boil, stirring all the time.
5. Pour into bowls, then put in the fridge until set.

Princess Perdissa (Summer)- Summer Pudding

You will need:

One cup of raspberries,
One cup of strawberries,
One cup of cherries,
One tablespoon of sugar,
Ten slices of bread.

1. Ask your gronwup to take all the stones out the cherries.
2. Put all the fruit and sugar into a saucepan of water, and ask your grownup to simmer it until the water goes red.
3. Tear the crusts off all the bread, and line the bottom and sides of a small bowl with most of the slices.
4. Double check that there are no gaps between the slices.
5. Ask your grownup to spoon the cooked fruit into the bowl.
6. Make a lid of the remaining bread, and press it down tight, making sure there are no gaps.
7. Ask your grownup to pour the red water all over the pudding, making all the bread pink.
8. Put a heavy plate on top, then put in the fridge for at least an hour.

Princess Antoinette of France- Crème brûlée

You will need:

Three cups of double cream,
Six tablespoons of sugar,
Six eggs,
One vanilla pod.

1. Crack six eggs, keeping the yolk separate from the egg white.
2. Mix the egg yolks with half the sugar until the mixture is a pale-sunshine colour.
3. Put the vanilla pod into the cream, and ask your grownup to simmer them gently until warmed through.
4. Ask your grownup to whisk the egg yolks into the cream, then cook until it's thickened.
5. Take the vanilla pod out, and pour the mixture into little bowls, then put the bowls in a roasting tin and half fill the tin with water.
6. Put the roasting tin in the oven and ask your grownup to bake until almost set.
7. Ask your grownup to sprinkle sugar all over the puddings.
8. Ask your grownup to put them in the hottest grill possible until the sugar caramelises.

Princess Tülay of Turkey- Aşure (Noah's Pudding)

You will need:

One cup of semolina,
Two tablespoons of rice,
One cup of sugar,
Two tablespoons of rosewater,
One orange,
One pomegranate,
One tablespoons of raisins,
Four dried figs,
One walnut per person.

1. Mix the semolina and the rice, and soak overnight in cold water.
2. In a different bowl, mix the dried fruit and soak for two hours in cold water.
3. Drain the semolina mixture, then ask your grownup to boil it until the starch comes out.
4. Ask your grownup to stir in the dry fruits and the sugar, and boil for another 15 minutes.
5. Once it's off the heat, add in the pomegranate innards, orange segments and the rosewater.
6. Ask your grownup to pour the pudding onto bowls, and put one walnut on top of each pudding.

Princess Perdissa (spring)- Lemon Cheesecake

You will need:

Two small tubs of marcapone cheese,
Two lemons,
Two tablespoons of sugar,
Eight digestive biscuits,
Four tablespoons of melted butter.

1. Put all the biscuits in a plastic bag, and break them all up into crumbs with your hands.
2. Ask your grownup to melt the butter, either in the microwave or in a saucepan.
3. Stir the crumbs into the melted butter, then spread out onto a small plate and put in the fridge.
4. In a large mixing bowl, stir the sugar in with the cheese.
5. Ask your grownup to strip the zest off the lemons, then cut them in half.
6. Squeeze all the juice out of the lemons, then add it to the cheese.
7. Sprinkle in the lemon zest, then mix everything up.
8. Spread the lemon mixture all over the biscuit base
